Next Food Network Star, Jeffrey Saad, Creates an Exclusive Family Recipe for Walden.com



The Next Food Network Star’s Jeffrey Saad began his food career working in a Chicago diner at the age of 13. He decided at that moment that he would open restaurants and food would be his life. He spent the next 25 years doing just that.

Formally trained at the Culinary Institute of America in Hyde Park New York and the California Culinary Academy in San Francisco, Jeffrey opened 3 locations of his Sweet Heat Mexican restaurants, and became a partner in Pasta Pomodoro Italian restauarants before transitioning into recipe and restaurant consulting.

In his The Next Food Network Star video, he says “Family means everything to me… I’m a husband first, a father second but I’m always the chef that keeps the family experiences flowing through food.”

To merge his two passions, food and family, Jeffrey has offered to share an exclusive recipe with Walden.com that the whole family can make together:

“We first fell in love with crepes on our trips to Paris. The street vendors swirl the batter on their large, round black cook tops. They fold them up and wrap them in parchment and hand them to you like an ice cream cone vendor. Making crepes is a great family activity. My son gets to stir the cold ingredients and stay safe, I get to teach my daughter to pour and swirl the crepes. My wife gets to line up the plates and slather on the Nutella. Everyone is involved, everyone likes them and we get to enjoy some quality time together.


Nutella Crepes for the whole family!

Ingredients:
4 ounces butter
2 each eggs
1 cup milk
1/2 cup water
1 cup all-purpose flour
1 teaspoons salt
1/2 cup Nutella


Instructions:
In a medium size non-stick pan melt the 4 oz. of butter (one stick). Once the butter is melted continue until the butter is golden brown. Turn off the heat. The residual heat will make the butter a little more brown so error on the side of golden brown vs. dark before you turn the heat off.

In a medium size bowl crack the eggs. Gently whisk in the water, milk and salt to combine. Whisk in the flour a little at a time until smooth.

While whisking the mixture pour the brown butter into the mix. You can strain the mixture to remove any lumps or use as is if the lumps are minor.

Using a paper towel wipe out the same non-stick pan you used to melt the butter. Get the pan hot over medium high heat. Using a 1/3 C measure scoop the batter and pour into the center of the hot pan. Using a rotating motion with your wrist swirl the batter around to the edges of the pan. The thinner the better. Set the pan back on the heat to cook. After two minutes use a rubber spatula to lift the edge and flip the crepe over. Cook on the other side for 30 seconds to a minute depending on how golden you like them.

Slide the crepe onto a plate and spread with one Tb of the Nutella. Fold into a triangle or roll up like a blanket. Eat as is or sprinkle with strawberries and powdered sugar. Enjoy!

Serves: 6.  Preparation Time is 15 minutes.  Inactive Preparation Time is 00 minutes.  Cooking Time is 15 minutes.
